Production Method: Catarratto grapes are crushed and fermented in a steel fermenter, much like the ones we use at the brewery. Bottled relatively young with only a short time maturing in it’s steel tank. This wine is unfiltered and bottled on lees (sediment from yeast and grape) so hazy in appearance, with minimal sulphur added as a preservative. Like all of our range, this wine is naturally fermented using the yeast from the fruit skins to ferment.
Appearance: Bright straw to hazy depending on the bottle.
Flavour Profile: Fruity notes of Green Apple, White Grape & Pink Grapefruit. There is a slightly savoury quality to this wine due to it being bottled on lees. Although it is fermented with naturally occurring wild yeast, this wine is clean and approachable, with its gentle acidity, exciting flavours, full mouthfeel and a medium dry finish.
