The vineyards are mostly at Horsmonden in Kent, with a smaller vineyard next to the winery at Rotherfield, East Sussex. Certified organic production by the Soil Association.

Production Method: Pet-nat or “Pétillant-Naturel” (natural sparkling) is a catch-all term for practically any sparkling wine made in the méthode ancestrale, meaning the wine is bottled before primary fermentation is finished, without the addition of secondary yeasts or sugars. This is also called “Col Fondo” in italian wine making. The blend of grape varieties were fermented in steel before being bottled young without priming sugar, unfiltered on lees to re-ferment and carbonate. Zero sulphur, unfiltered, and vegan friendly.
Appearance: Pale yellow
Flavour Profile: Bursting with vibrant bright green apple, citrus fruits, fresh earthy notes, with an effervescent fizz. Moderate acidity, some pear like sweetness, with a lengthy dry finish thanks to the lower alcohol content and high carbonation. More rustic than a champagne, with fresher fruit notes and less intense or lasting acidity.
